Garden Vegetable Couscous

2 cups water                          

1 TBSP olive oil

1 cup couscous                                   

1 cup chopped chard

½ cup chopped carrot             

2 cloves garlic, minced

½ cup chopped zucchini                     

½ teaspoon salt

½ cup Feta cheese                               

1-2 sliced tomatoes

 

Bring water to boil in large saucepan. Add oil, couscous, greens, carrots, and garlic. Cover. Turn off heat. Let sit 10 min. Toss in zucchini, optional salt and ½ of the Feta. Arrange in serving/casserole dish. Top with sliced tomatoes and remaining Feta. Serve hot or cold.
